About 17 years ago I followed a recipe for Simnel Cake which involved making your own marzipan. The marzipan was a bit of a disaster but I kept on going and made a basically disastrous Simnel Cake... Deeply marked by the experience, I haven't made another Simnel Cake - until this year!
This one (using bought French marzipan, I have to admit) was a doddle, and absolutely lovely. For anyone who doesn't know, it's a light fruit cake with a circle of marzipan baked into the middle (yum yum) and another on top, which is toasted before serving. The eleven balls of marzipan on top represent the eleven faithful disciples of Jesus, so it's an Easter cake. It went down VERY well with the troops...

My news is not so good - my mum, for whom I blog, is not well at all and can't get downstairs to see the computer at the moment. My blog posts feel a bit lost, knowing that she won't be reading them. I hope that the medication and treatment she's being given will help matters, and that in the meantime we can organise a laptop so that we can remain in blogging contact. She has been seriously ill for about two years now, and is expected to get worse, but we would very much appreciate your prayers. Thanks so much for all your support.

I am so so sorry about your mum, I will be thinking about her and your family and hope for good news.
I made home made marzipan, will dig out the receipe, the boys once eat shop bought , but loved this!

I have made simnel cakes in the past and once made the mistake of dividing the marzipan for the balls into 12 and sitting them all on the top! Judas had a second chance with me!!!

Floss, I am sorry to hear that your Mum is unwell. I have prayed just now and will continue to do so. A laptop would be great for her, I hope you can pull it off. Let us all know if we can do anything.

Oh dear, that's awful to hear such news. We all hope your mum is going to get better.
On the brighter side of things, that Simmel cake looks really, really good. Marzipan are supposedly very tricky things to make! I've never dared try though (but love to eat the ready-made ones).
