Simnel Cake and news

About 17 years ago I followed a recipe for Simnel Cake which involved making your own marzipan. The marzipan was a bit of a disaster but I kept on going and made a basically disastrous Simnel Cake... Deeply marked by the experience, I haven't made another Simnel Cake - until this year!This one (using bought French marzipan, I have to admit) was a doddle, and absolutely lovely. For anyone who doesn't know, it's a light fruit cake with a circle of marzipan baked into the middle (yum yum) and another on top, which is toasted before serving. The eleven balls of marzipan on top represent the eleven faithful disciples of Jesus, so it's an Easter cake. It went down VERY well with the troops...

My news is not so good - my mum, for whom I blog, is not well at all and can't get downstairs to see the computer at the moment. My blog posts feel a bit lost, knowing that she won't be reading them. I hope that the medication and treatment she's being given will help matters, and that in the meantime we can organise a laptop so that we can remain in blogging contact. She has been seriously ill for about two years now, and is expected to get worse, but we would very much appreciate your prayers. Thanks so much for all your support.

I am so so sorry about your mum, I will be thinking about her and your family and hope for good news.

I made home made marzipan, will dig out the receipe, the boys once eat shop bought , but loved this!

So sorry to hear about your Mum and my thoughts and prayers are with you all. It is difficult being so far away too I know.

I have made simnel cakes in the past and once made the mistake of dividing the marzipan for the balls into 12 and sitting them all on the top! Judas had a second chance with me!!!

Floss, I am sorry to hear that your Mum is unwell. I have prayed just now and will continue to do so. A laptop would be great for her, I hope you can pull it off. Let us all know if we can do anything.
I love the story about the cake and yours turned out well, no more bad memories about that.

Floss ~ I'm so sorry to hear that your Mum is unwell. I really hope that the treatment and medication make things a bit more tolerable for her.

I'm not a big marzipan lover but your Easter cake does look lovely though.

Oh dear, that's awful to hear such news. We all hope your mum is going to get better.

On the brighter side of things, that Simmel cake looks really, really good. Marzipan are supposedly very tricky things to make! I've never dared try though (but love to eat the ready-made ones).

P.S. Yes, I do eat chicken!

How lovely that your blog is for her though, what a lovely thing to do for your mum - we all get to enjoy your words too of course, but I bet your mum looks forward to every post - by the way you told me you are very tired, don't forget you are not long back on your feet yourself - time to slow down and take care. yapsxxx

Oh Floss that's really awful for your Mum. It must be so hard to be sick for such a long time. Hopefully she'll be feeling much better very soon. I'm sure a laptop would certainly help take her mind off her illness. Here's hoping all settles down soon. Love to you and her.

your Mum has my prayers and is in my thoughts, infact i was thinking about her the other day when i visited your blog. a laptop is invaluable when mobility becomes difficult.
your simnel cake looks delicious and i prefer the natural coloured marzipan to the yellow.
